  1. 4 More Pounds! 4 More Pounds!


    The joy continues. I weighed in this morning FOUR POUNDS LIGHTER than last week and 21 POUNDS LIGHTER than when I started my Diet-to-Go low carb plan four weeks ago! I am down to 235 -- that's just 4.6 pounds away from reaching my first min-goal of 10% body weight. I started at an all-time high of 256 and vowed to reach 10% down; 10% of 256 is 25.6 pounds. My week five food arrived like clockwork yesterday and I am ready to dig in and stay the course. I love this food. The Spicy Ham & Egg Sofrito I had for breakfast yesterday was super delicious. It was spicy ham strips amid a bed of scrambled eggs. Mmm, mmm, mmm good! Here's just a little taste of what's on tap for me this week... --Steak & Eggs --Chicken Soufflé --Italian Meatballs --Creole Catfish in a Lemon Herb Sauce The food is filling and flavorful. And the good thing about a low-carb plan, if I feel a need to snack between meals, I simply turn to my pepperoni and cheese slices, or I join my family for a grilled burger or pork chop -- and I suffer no guilt or weight gain! I can't wait to see how well I do when I finally carve out the time to hit the treadmill for 30 minutes a day!
